How do I turn on or off an email copy of all notes created in the system
You can set up an email address that will receive a copy of every note entered into the system. This might be useful if you want to populate a mail list, or there is some other system that can accept updates via email.
Login as the account owner, click on the "Account" tab, and then click on the "Account Settings" link:

Set the "Notes email:" to whatever email you wish all notes to be forwarded to.
Additionally, if you want to disable all emails to everyone on note creation, (and you might want to do this for security reasons) uncheck the box under "Global Notifications -- Send email notifications on these create events:".
